Description

Even better than potato bake


Ingredients

Scale

4 large sweet potatoes

butter

5ml crushed garlic

125 ml grated parmasan cheese

salt and pepper

250ml fresh cream


Instructions

Heat the oven to 180 °C

Cut sweet potatoes in thin slices Wash the slices and pat dry.

Butter the oven dish and arrange the first layer sweet potatoes, sprinkle some garlic, parmasan cheese, salt and pepper. Repeat process and round off by pouring over the cream and sprinkling with parmesan cheese.

Drizzle with a few cubes of butter and bake in the oven for 1 hour.

 


Notes

Serve this dish immediately when it comes out of the oven. The sweet potatoes tend to chew if left unattended.

  • 2 large French loafs or 2 Uitkyk Baguette, Sliced in 3
  • 100 g Basil Pesto
  • 4 large tomatoes or 100 g cocktail tomatoes, sliced
  • 200g mozzarella, sliced in wedges
  • Fresh Basil leaves as garnish

Instructions

  1. Set oven to 180°C
  2. Slice the bread in half. Spread both sides with pesto.
  3. Pack the tomatoes and mozzarella on top of pesto
  4. Put in oven until the cheese has melted. Garnish with fresh basil leaves.

  • 1 rol blaardeeg (puff pastry), ontvries
  • 24 snoepworsies van jou keuse (cheese grillers is baie lekker)
  • 1 eier, geklits
  • 1 koppie tamatiesous
  • Roosmaryn takkies vir versiering

Instructions

  1. Rol die deeg oop op ‘n meelbestrooide oppervlakte. Sny die deeg in die lengte in twee lang stroke. Sny dan weer in die breedte in die helfte en elke helfte in drie stroke, sodat jy 24 blokkies deeg het.
  2. Plaas ‘n worsie op elke stukkie deeg met die kante van die worsie op die skerp punt en vou die ander twee punte na mekaar toe en druk vas. Die worsie se punt sal beide kante oop wees en die middle bedek met deeg. Herhaal met al die worsies en deegvierkant.
  3. Sit ‘n gesmeerde sirkel bakpapier op ‘n bakplaat. Pak die worsies in die deeg in ‘n sirkel daarop om ‘n krans te vorm. Verf dit met geklitste eier en bak by 180°C vir 25 – 30 minute.
  4. Koel effens a fen pak dit mooi op ‘n opdien bord. Gooi die tamatiesous in ‘n bakkie en sit dit in die middle van die krans.
  5. Versier die krans met takkies roosmaryn.

SLAAISOUS

  • 3 eetlepels heuning
  • 2 eetlepels olyfolie
  • 3 eetlepels suurlemoensap
  • 1 teelepel growwe mosterd
  • ‘n Knippie sout en varsgemaalde swartpeper

SLAAI

  • 200 g gemengde slaaiblare
  • 50 g wilde roketblare
  • 2 appels, in wiggies gesny, pitte verwyder en liggies bedruip met suurlemoensap
  • 1 koppie okkerneute
  • ½ gedroogte bosbessies (cranberries)
  • ½ koppie matured cheddarkaas, dun gesny (opsioneel)

Instructions

  1. SLAAISOUS: Skud die heuning, olyfolie, suurlemoensap, mosterd, sout en peper goed saam in ‘n glasflessie. Hou eenkant.
  2. SLAAI: Rangskik die slaaiblare en roketblare op ‘n opdienbord. Rangskik die res van die bestanddele, behalwe die kaas op ‘n bord. Net voor opdiening kan jy die kaas liggies oor die slaai breek. Bedien die slaaisous apart dan kan elkeen oorgooi na smaak. Dit verhoed ook dat die slaai staan en pap raak wanneer dit deurdrenk is van slaaisous.

  • 600g Uitkyk witbrooddeeg, koud (Kry al die bestanddele by UITKYK)
  • 125ml sondroëtamatie-pesto
  • 200g Gekapte sampioene, gebraai
  • 12 Basilieblare, geskeur
  • ‘n Hand vol gerasperde Mozzarella

Instructions

  1. Rol die koue deeg op ‘n werkblad oop in ‘n groot reghoek. Smeer die pesto oor die deeg, strooi die sampioene, basilie en mozzarella eweredig oor en rol die deeg op in ‘n stywe rol. Gebruik ‘n skerp mes en sny die opgerolde deeg in 12 porsies.
  2. Spuit die holtes van ‘n muffinpan met kleefwerende kossproei en sit ‘n deegspiraal plat in elke holte. Bedek met ‘n vadoek en laat rys in die pan tot dubbel die volume. (As jy yskoue deeg gebruik, sal dit effens langer neem om kamertemperatuur te bereik en te rys)
  3. Voorverhit die oond tot 180°C. Bak die pizzarolletjies vir sowat 20 minute of tot gaar en uitgereis vol gesmelte kaas. Heerlik warm of teen kamertemperatuur.

Ingredients

  • 6 large eggs
  • 3 large egg whites
  • 1 jalapeno pepper, seeded and minced
  • Dash cayenne pepper
  • 4 breakfast chicken sausage links, casings removed
  • 3/4 cup shredded cheese blend
  • 1 can (4 ounces) chopped green chilies, drained
  • 6 whole wheat tortillas (8 inches), warmed
  • 6 tablespoons salsa

Instructions

  1. In a small bowl, whisk the eggs, egg whites, jalapeno and cayenne; set aside.
  2. Crumble sausage into a large skillet; cook over medium heat until no longer pink. Drain. Push sausage to the sides of pan. Pour egg mixture into center of pan. Cook and stir until set. Sprinkle with cheese and chilies. Remove from the heat; cover and let stand until cheese is melted.
  3. Place 1/3 cup mixture off center on each tortilla. Fold sides and end over filling and roll up. Top with salsa.
