- 400g Courgette noodles
- 2 tsp fine salt
- 1 tbsp coconut oil
- 1. Mix the courgette noodles with salt and leave them in a colander in the sink for about 20 minutes to drain any excess moisture.
- 2. Warm the coconut oil in a large pan and add the courgettes. Sauté them for a few minutes until they are just cooked. Then add them to whatever you like.
- You could use these noodles as a substitute for any pasta with any pasta sauce in any Asian broth or stir-fry or on their own as a light side with some grilled chicken or fish.
