Coconut oats with griddled pineapple

  • 165ml coconut milk
  • 1 tbsp. sugar
  • 2 thick slices pineapple, unpeeled
  • 1 piece of preserved ginger in syrup, chopped (optional)
  • Zest of 1 lime
  • A little maple syrup

Instructions

  1. Mix the oats and coconut milk in a large microwave-proof bowl. Add 150ml water to the mixture. Microwave on high for 5 minutes, stirring halfway through cooking. You can also cook on the stove; bring mixture to boil and then simmer for 5 minutes or until cooked.
  2. Meanwhile, heat a griddle pan, Sprinkle half the sugar on one side of the pineapple slices. Put sugar-side down on the pan and cook for a couple of minutes. Turn the slices over, sprinkle with the rest of the sugar and cook for 2 minutes.
  3. Serve the oats sprinkled with chopped ginger, if using, lime zest and a spoonful of syrup, to taste. Cut the pineapples slices into quarters and serve alongside the oats.

  • 320g ready-rolled puff pastry
  • 400 pork chipolata sausages (thin pork sausage)
  • 1 tbsp. olive oil
  • 250g mushrooms, sliced
  • 6 rashers of streaky bacon
  • 3 medium eggs
  • 300ml double-thick-cream

Instructions

  1. Unroll the pastry sheet and use it to line a greased 18cm x 28cm tray-bake-tin, pressing it in well. Trim the overhanging pastry at the short ends and the corners. Prick the base with a fork. Chill in the fridge
  2. Heat the oven to 220°C. Put a baking sheet in to heat up. Skin the pork sausages and break each into 4 chunks. Heat a non-stick frying pan, add the sausages chunks and fry them for about 8 minutes, shaking the pan ever so often until chunks are browned all over.
  3. Add the oil to the pan and when hot add the mushrooms. Cover and cook for 3 minutes then take the lid off and cook for another 2-3 minutes until they re browned and the juices are absorbed. Tip into the sieve with the sausages.
  4. Stretch the bacon rashers with the back of a knife. Cut in half width ways then in half lengthways. Whisk the eggs and cream in a bowl. Season.
  5. Spread the sausage meat and the mushrooms in the pastry case. Pour in the beaten eggs and cream, and then crisscross the bacon strips over the top.
  6. Put the tin on the hot baking sheet on the bottom half of the oven and bake for 25-30 minutes until lightly browned. Leave to 5 min before serving straight from the tin.

Ingredients

  • 500g baby potatoes, cooked with skin on
  • olive oil
  • salt
  • freshly ground pepper
  • 1 bunch of spring onion chopped
  • juice and zest of 1 large lemon
  • 1 packet fresh rocket leaves or lettuce, roughly broken into pieces

Instructions

  1. Put the sill-warm potatoes in a salad bowl and lightly press a wooden spoon into each potato to break open.
  2. Pour generous amount of olive oil over and season well with salt and pepper.
  3. Sprinkle the spring onion, lemon juice and zest over. Mix and let cool.
  4. Finish by garnishing with rocket leaves or lettuce.

Notes

  • Spring onions can be used raw in salads, as a garnish or cooked as part of Asian stir-fry dishes.

  • 60ml (¼k) olie
  • 2 eiers
  • 125ml (105g) suiker
  • 500ml (270g) bruismeel
  • 10 ml (2t) bakpoeier
  • 2,5ml (½t) sout
  • 250ml melk
  • 250ml (80g) cheddarkaas, gerasper
  • SOUS
  • 125ml (120g) botter
  • 30ml (2e) Marmite/Bovril
  • 125ml (40g) Cheddarkaas, gerasper

Instructions

  1. Voorverhit oond tot 180°C en spuit vierkantige 23 cm-oondpan met kleefwerende sproei.
  2. Klits olie, eiers en suiker tot lig en donsig
  3. Sif meel, bakpoeier en sout saam
  4. Vou meelmengsel en melk beurtelings by eiermengsel in. Vou gerasperde kaas laaste in.
  5. Skep beslag in oondbak en bak vir 35minute tot goudbruin en gaar
  6. SOUS: Smelt botter en Marmite/Bovril.
  7. Sit oond af, haal warm koek uit oond en prik vol gaatjies. Gooi gesmelte bottermengsel oor koek.
  8. Sprinkel gerasperde kaas oor koek en sit terug in warm oond om te smelt.
  9. Sny koek in netjiese blokke en bedien.

  • Grated Cheddar
  • 6 Eggs
  • Half a cup of milk
  • Season to taste

Instructions

  1. Pre-heat oven to 180°C and spray a muffin pan with no-stick baking spray.
  2. Fill the muffin holes with chopped and roasted vegetables, Feta and grated cheddar cheese.
  3. Pour a mixture of 6 eggs, half a cup milk in the muffin holes.
  4. Season to taste.
  5. Bake for 25 minutes or until cooked through.
  6. Set out to cool down.

  • 2 mealies
  • 4 medium chicken breasts
  • ½ tbsp. sunflower oil
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. red-wine vinegar
  • 1 tbsp. honey
  • ½ tsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 2 avocados, sliced and sprinkled with lemon juice
  • 400g mixed tomatoes, sliced
  • 1 heart romaine lettuce, roughly chopped
  • 1 green pepper, chopped
  • 4 tortilla wraps
  • 150g blue cheese or cheddar

Instructions

  1. 1. Heat the oven to 180°C and heat a griddle pan on the hob. Brush the mealies and chicken with sunflower oil. Brown the chicken on both sides, put it in a roasting pan; cook for 20 minutes or until cooked through. Turn griddle pan down to medium and fry the mealies for 10 – 12 minutes or until cooked.
  2. 2. For the dressing, mix olive oil, red-wine vinegar, honey, Worcester sauce and Dijon until smooth and combined.
  3. 3. Slice the chicken and slice the corn off the cob. Add both to a serving bowl with other ingredients in rows. Drizzle over dressing, warm the wraps and cut them in 4. Serve with cheese on side.
